Fancy a fillet?

Quick and easy to prepare, here’s the perfect meal to celebrate a special occasion . . . and impress your guests!

Sundried Tomato-And-Feta-Stuffed Fillet With Fresh Rosemary

Ingredients:
1 large beef fillet; 1 cup rehydrated (or marinated) sundried tomatoes; 2 rounds PnP feta cheese; PnP salt and pepper; 4 twigs fresh rosemary; PnP olive oil; 8 rashers PnP bacon; string

Directions: Use a sharp knife to butterfly the fillet and form a pocket for stuffing. Layer the sundried tomatoes and feta cheese into the pocket. Season well with salt and pepper. Remove twigs from rosemary and sprinkle over. Carefully close the pocket and use string to secure it along its whole length.

Heat a large frying pan until smoky. Rub olive oil over the fillet and seal the meat in the hot pan. Do not cook the meat, just allow it to caramelise and brown all over. Place the sealed fillet in a roasting dish and arrange the bacon rashers over it. Bake for 20 minutes at 200°C, or until done to your liking.
